BLT Deviled Eggs
The BLT sandwich as a deviled egg. Mayo and sundried tomato filling topped with a candied bacon shard and tiny gem lettuce.

Ingredients
- 12 large eggs
- 12 egg yolks
- 3 tablespoons mayonnaise
- 1 tablespoon sun-dried tomatoes, very finely minced
- 1 teaspoon red wine vinegar
- Salt and pepper
- 4 strips thick-cut bacon
- 2 tablespoons brown sugar (for candying)
- Tiny gem lettuce leaves for garnish
- Cherry tomato halves for garnish
Instructions
- Candy bacon: coat strips with brown sugar. Bake at 375°F for 15–18 min until caramelized and lacquered. Cool and break into shards.
- Mash yolks smooth. Beat in mayo, sun-dried tomato, vinegar, salt, and pepper.
- Pipe. Top with candied bacon shard, tiny lettuce leaf, and cherry tomato half.
Tips
- Candied bacon is more structurally sound than regular bacon — it holds its shape longer.
- Gem lettuce leaves are the right size — they naturally cup the filling.
