Champagne & Caviar Deviled Eggs

Ingredients
- 6 large eggs
- 3 ounces crème fraîche
- ¼ cup champagne (quality matters)
- 1 tablespoon champagne vinegar
- ½ teaspoon Dijon mustard
- ¼ teaspoon salt
- ⅛ teaspoon white pepper
- ½ teaspoon fresh lemon juice
- 2 tablespoons quality caviar (sturgeon or quality substitute)
- ½ tablespoon unsalted butter
- 1 shallot, minced very fine
- Fresh tarragon for garnish
Instructions
- Reduce champagne by half over medium heat (3-4 minutes) until syrupy. Add champagne vinegar and cool completely. Fold into crème fraîche gently with a spatula.
- Halve hard-boiled eggs and remove yolks. Whisk yolks with the champagne-crème fraîche mixture, mustard, salt, pepper, and lemon juice until silky (do not overmix—keep some air).
- Pipe filling delicately into egg whites. Chill for 20 minutes. Just before serving, crown each egg with a generous teaspoon of caviar and garnish with a single tarragon leaf.
Tips
- Use real champagne or high-quality Crémant; cheap sparkling wine tastes harsh when reduced.
- Reduce champagne gently to preserve aromatic notes—avoid aggressive boiling.
- Add caviar at the very last moment; its pearls burst on contact with acid.
- For a more affordable option, use quality lumpfish caviar or even crème fraîche pearls made with sodium alginate.
