Christmas Ham & Honey Glaze Deviled Eggs

Ingredients
- 6 large eggs
- 3 tablespoons mayonnaise
- 2 tablespoons honey (divided: 1 for filling, 1 for glaze)
- 2 ounces quality ham, minced fine
- 1 teaspoon Dijon mustard
- ½ teaspoon apple cider vinegar
- ⅛ teaspoon cayenne pepper
- ¼ teaspoon salt
- ⅛ teaspoon white pepper
- 3 slices thin-cut ham (for crisping)
- ½ tablespoon olive oil
- Fleur de sel for garnish
Instructions
- Make crispy ham: brush ham slices with olive oil and roast on parchment at 375°F for 8-10 minutes until edges curl and crisp. Cool and break into shards.
- Halve hard-boiled eggs and remove yolks. Whisk yolks with mayonnaise, 1 tablespoon honey, minced ham, mustard, vinegar, cayenne, salt, and pepper until smooth.
- Pipe filling into egg whites and chill for 20 minutes. Warm remaining honey gently and drizzle a small amount over each egg. Top with crispy ham shards and fleur de sel.

- Bake ham slices rather than pan-frying for more even crisping with less grease.
- Use quality deli ham with minimal fillers; mass-produced ham tastes plastic.
- Warm honey makes it easier to distribute evenly; cold honey is too thick.
- Assemble ham crisps just before serving to preserve their texture.
