Everything Bagel Deviled Eggs

Ingredients
- 12 large eggs, hard-boiled and peeled
- 12 egg yolks
- 4 oz cream cheese, room temperature
- 1 tablespoon sour cream
- 2 teaspoons everything bagel seasoning, plus more for topping
- 1 tablespoon fresh chive, finely minced
- 1 teaspoon lemon zest
- Salt and white pepper to taste
- 3 oz smoked salmon, cut into thin strips and rolled into curls
- ¼ small red onion, very thinly sliced and pickled in red wine vinegar
- 2 tablespoons capers, patted dry and fried in oil until crisp
- Extra everything bagel seasoning for topping
Instructions
- Fry capers: pat completely dry. Heat ½ inch neutral oil over medium-high. Fry until they burst open and crisp, about 60–90 seconds. Drain on paper towels.
- Mash yolks completely smooth. Beat in cream cheese, sour cream, everything bagel seasoning, chive, lemon zest, salt, and white pepper until silky and well combined.
- Pipe into egg white halves. Top each with a smoked salmon curl, a few strands of pickled onion, one fried caper, and a pinch of extra everything seasoning.
Tips
- Room temperature cream cheese is non-negotiable — cold cream cheese will leave lumps no matter how hard you beat it.
- Pickle the onion at least 30 minutes ahead — 10 minutes in red wine vinegar with a pinch of sugar is all it needs.
- Fried capers are the secret weapon here. They bloom into tiny crispy flowers and add an intense briny burst.
- Everything bagel seasoning already contains salt — taste before adding any additional.
