Jalapeño Popper Deviled Eggs

Ingredients
- 12 large eggs, hard-boiled and peeled
- 12 egg yolks
- 4 oz cream cheese, room temperature
- ¼ cup sharp cheddar, finely shredded
- 2 jalapeños, roasted until charred, peeled, seeded, and finely minced
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- Salt to taste
- 6 strips thick-cut bacon, cooked until very crispy and crumbled
- 1 fresh jalapeño, very thinly sliced into rings for garnish
- Extra smoked paprika for finishing
Instructions
- Roast jalapeños directly over a gas flame or under a broiler until charred on all sides. Place in a sealed bag for 5 minutes to steam. Peel, seed, and mince finely.
- Mash yolks until completely smooth. Beat in cream cheese, cheddar, roasted jalapeño, garlic powder, smoked paprika, and salt.
- Pipe into whites. Top each egg with bacon crumble, a fresh jalapeño ring, and a dusting of smoked paprika.
Tips
- Roasting the jalapeños is the non-negotiable step — it adds smoke and depth and removes raw pepper bitterness.
- For more heat, leave a few jalapeño seeds in the filling.
- Crumble the bacon while it's still warm — it crumbles more cleanly than cold bacon.
- The fresh jalapeño ring on top signals heat level to guests — a visual warning and a flavor hit.
